apples to broccoli

The highlight of the weekend was our annual apple picking trip. While at the farm, we decided to harvest some broccoli too. The weather was perfect, the kids were in great moods and the food was purely delicious.



When we arrived home, the kids were put to bed and we set off to make our favorite post-apple picking dessert from a favorite old cookbook. The recipe for Apple Chip Cake from the Huff House Inn in New York State is comfort food at its best.

Apple Chip Cake

Ingredients:
1 1/2 cups oil
2 cups sugar
2 eggs
1/2 teaspoon salt
1 teaspoon cinnamon
1 teaspoon baking soda
3 cups flour
1 teaspoon vanilla
3 cups peeled, chopped apples

Directions:
Preheat the oven to 350 degrees. In a mixing bowl combine the oil, sugar, and eggs. Beat until smooth. Sift together the salt, cinnamon, baking soda, and flour and beat into the wet ingredients to form a stiff batter. Add the vanilla and chopped apples and stir to blend. Spoon the batter into a greased and floured 9x13 inch pan and bake 1 hour.


Sorry, I don't have a favorite broccoli recipe to share. There's no way to make that funny green vegetable taste this good.

I'd have to try to get it to you while it's still warm.

And crunchy on the outside...

And chewy on the inside...

My house still smells so good.

It looks like a beautiful weekend for you. We did the same (minus this yummy recipe which I will have to try).

I love this tradition! It's one of my very favorite things about fall. I simply couldn't narrow it to one post.
