In honor of Cinco de Mayo, I'm going to attempt to make sopapillas tonight (using a recipe from Emeril). While in New Mexico a few years ago, I fell in love with these fluffy pillows of fried dough. We ordered them at every restaurant from Albuquerque to the Colorado border.
I might as well include some photos from Flickr because if they're good, they'll be eaten before the camera comes out. If they're bad, well...is fried dough ever really bad?

Yep they are delish. My hubby is Mexican and we eat them all the time. Hope yours turned out good. Back in California we could go out and order them places. They are harder to find in MD. Glad I found your blog, too. It's cool!
I like you are doing the sopapillas because of the 5 de Mayo...but those are not mexicans. The term is applied to three distinct breads: One from Chile, one from Uruguay and Argentina and the last one from Mexico. I just want to let you know that for me is funny that May 5th is celebrating here in the States and not in Mexico. Fun Fact!

Sopapillas are definitely more of a Mexican-American treat. I'd be happy to fry some dough in the shape of a Churro instead! Or any other shape, for that matter :)
